The Best Pot Roast....EVER!

I live in a small town.  Like really small.  
But I LOVE it!
There are so many reasons why I love it...
I could list them all for you,
but I won't.
But I am going to give you one of my favorite reasons.
My local grocery store.
Its called Barretts.
I LOVE that they know me...
We were looking to make a Roast for Sunday Dinner, 
 We were standing at the meat counter, trying to decided what to get. 
Dave, the best meat counter guy, told us about this recipe. 
And it is 
SO GOOD, SO EASY, and SO TENDER!!
You'll need:
McCormicks slower cooker Savory Pot Roast season packet
An Au Jus packet
A Can of Pepsi (we use Coke because we always have coke in our house)
And Boneless Cross Rib Roast
and your crock pot

   Put your Roast in the crock pot. 
Mix the Slow cooker seasoning with 1 cup of Water.
Pour on top of roast.
      Add the whole can of Coke.
Cover with your lid for 8 Low or 4 hours on high.
Its VERY important that you never lift the lid!

Right before you are ready to pull it out, 
sprinkle your dry Au Jus packet over the roast.





Ahh.....
Pull it out and slice it up!
I promise you it is the most tender Roast EVER!!

ENJOY!!

  1. I think I know Dave, and who gave him this recipe! If you want to change things up a little you can add a little fajita marinade to it. It gives the roast a nice little kick and the meat is Great on sandwiches the next day!

  10. made this last night. not the most tender. I cooked mine on the 4hr, high setting. I would definitely recommend cooking it on low for 8hr. Mine was a little tough.

  12. I also bought the BBQ packet instead. They didn't have the Savory Pot Roast. And also, Cross Rib Roast is also called Shoulder Rib or Shoulder Roast. :) I'm about to put this in my crockpot for dinner!! CANNOT WAIT!

    1. You can put it in a heavy pot, bring it up to boiling, then turn the flame or electric element to 1. You will still have to leave it on for a really long time, no less than 6 hours with the kid on, but it won't be the same. Or you can get a slow cooker from Wal-Mart for about $15. You will find ways to use it, do I would go for the latter option.

  17. I've got this in the crock pot now.. will be pulling it out in 30 mins! i also had a hard time finding boneless cross rib roast, the butcher said shoulder roast would do... in a 5 quart slow cooker.

  18. After reading this receipe i am gonna be hungry all day! If you have no crockpot simply brown the meat on all sides and transfer roast to the pre-heated 200 to 235 degrees till internal temp of 150-160° for medium.

    1. The beauty of a slow cooker is that you cook low & slow. This helps to break down the tough connective tissue on cheaper cuts of meat & also infuses the meat with it's own (and added) juices...that's when things get so yummy! Keep this in mind when considering switching up a recipe to cook stovetop or oven instead of using a slow cooker. Also best to cook most of the slow cooker beef roast & pork roast recipes for the longer, lower heat option to get that whole low & slow magic going. Having said that, I Cook most of the chicken recipes at the quicker time. Especially if using breasts which will tend to dry out & fall apart, and not in a tasty way, when cooked too long no matter the recipe.

  19. I just made this the other night and it was crazy good. I did tweak it just a tad thought, instead of au ju because I couldn't find it (surprisingly) I used brown gravy and it was so yummy. Plus I added some carrots and onion too. I did it on the 4 hour option and if it was crazy good on just four hours then I know the low and slow on 8 hours would knock my socks off!

  23. In the recipe you mention Au Jus but you don't mention how to use it in the recipe do I assume the 1 cup of water is for both the savory mix and the au jus?

  24. To the last comment...towards the end of the recipe it states to sprinkle the dry Au Jus on top of the roast a few minutes before pulling it out of the crock.

    Making this tonight for dinner. I decided to go ahead and use root beer instead and throwing in some small red potatoes and carrots. Can't wait to taste it!!!

  25. This might just taste pretty darned good (the final product picture certainly LOOKS good). But I look at the 3 added ingredients, and wonder why one would turn a perfectly good cut of beef into a chemical lab creation. Just sayin'.

  28. I just threw mine in to cook overnight. I used chuck roast - it was on mark down (cook by today) but since I was coming home to cook it, I didn't care! :) I also doubled recipe for leftvovers.........will have two meals waiting for me! I'll take out the meat in the AM and then cook the veggies in the broth during the day. Summer yummy!

  30. anyone ever made gravy from what's left in the crockpot? I wondered how it would taste if I thickened it up with some cornstarch. Or should I just make some brown gravy to go with our mashed potatoes? Making it today, can't wait!!!!

  31. Made this tonight! So tasty however few things were different. Used a can of cherry coke instead of regular, added potatoes, carrots & some onion & didn't use the au jus packet... cooked on low for about 9 hrs. Melt in your mouth yummy. My house loved it! My man had 3 helpings! Thank you so much for sharing!

  32. Made this today for dinner. It was very good!!! The only thing that I would do different is put the Au Jus sauce in the crock pot while it is cooking or not at all. When I put it on right before I took it out and ate it. It was too salty. My husband loved it besides that!! Will definitely make it again. Oh I also cooked it for 8 hours. Very tender!!

  38. You are using RIB ROAST. As in PRIME RIB. Why would anyone put a prime rib in a crock pot? Of course it is good, it is PRIME RIB. The reason for using a crock pot is to make a cheaper cut of meat more tender. Some sea salt, cracked pepper, a little rosemary if you wish, is all you need for a prime rib to be fabulous. Just throw it in the oven with an oven thermometer. No all day cooking! Nonetheless, I am going to try this with a top round. I know that you need soda that is not diet for the sugar content. I would guess that Coke or Pepsi or Dr. Pepper (if you like that cherry flavor) would all work fine. Diet soda will not serve the purpose in this recipe since it has no sugar content.

    1. A CROSS rib roast (which is what they specify to use in the recipe) is a different cut than a rib roast. Cross rib roast is basically the same thing as a chuck roast.

  39. I made this for dinner and the family gave it two thumbs up. I did add carrots & chunks of onion. I used a sirloin roast and it was fall apart tender. This is the best pot roast I have ever made and will be the only recipe I use from now on. Thanks for sharing!

  40. @anonymous..a cross rib roast is not a "prime" standing rib roast. It is from the shoulder and goes down into the ribs. It is a much tougher cut of meat. Also, Prime refers to a grade of meat not a cut. But, most people call a standing rib roast a Prime Rib roast.

  41. I made this last night and it turned out delish. I used a pot roast, added potatoes, carrots, celery and onions.. Cooked over 8 hours. I didnt use the whole au jus packet because I read in previous comments theirs was too salty. Also I didn't wait to add the au jus at the end, I put it in with everything else.

  45. I made this 2 weeks ago for Sunday dinner. I really is the best roast I have ever made! My husband and kids loved it (the fact that my kids loved it should attest to how good it is as my children HATE roast). It is now a regular Sunday meal. It wasn't even close to being too salty, it was just perfect!! <3

To those who are asking about the cut of meat, you can vary recipes like this according to what you're able to find in the store at the time, prices, etc. For instance, instead of an actual roast, I often get a different cut (that's both thinner and able to be purchased on sale for a good price), because I need it to cook more quickly and because I like a little less meat in mine and more other stuff - mushrooms, carrots, whatever. The beauty of a crockpot - use a recipe like this and tweak to fit your own budget and tastes! You might find that a slight tweak works even better for you, so be creative. :-)

  50. I made this tonight and it was incredible! Literally the best pot roast I've ever had. I used a beef sirloin roast, the coke and the savory mix. I let it cook for 8 hours and it was heaven in my mouth. I never added the Au Jus sauce because it didn't need it.

  53. I love this recipe! It is my go-to recipe for roast ever since I found it. This time, though, I forgot to pick up the seasoning packet but I figured out I don't even need it! I have most the spices on hand and it was nice to have a little more control over the amount I put in. I usually add carrots, potatoes, some onions, and even a little celery occasionally. So delicious! My bf isn't a huge roast fan and he just scarfs this up, even the leftovers (which he also usually hates lol). Thank you so much for sharing!

  66. I have this in my crock pot now and it smells amazing! My only concern is that the liquid doesn't cover the roast. Is that going to matter? Generally when I do a roast, my liquid always covers the roast completely so just wondering if it will cook completely when not covered by the liquid?

    1. Cover the roast? You're just boiling the meats. In a crockpot you generally need very little liquid. A cup of water and can of soda is waaaay more than enough.

  71. I have this in the crock pot now. After reading the comments I added potatoes, carrots, onions and mushrooms. I went ahead and sprinkled the au jus pkt over the meat and then poured 12 oz of Coke over it. I never have Coke in the house but I had my husband bring one from work. For those wondering about colas and meat, they are a good addition. I have made Root Beer Pulled Pork several times. I have also used cola and onion soup mix on pork chops in the oven.

  75. I'm really sorry to say that, but only Americans can have am idea to prepare meet with Coke full of High Fructose Corn Syrup. If it's zero , it doesn't matter, all the sugar, splenda, trivia, stevia makes the whole meal unreadable for you stomach you could also put chips into the coke and after "marinating" it - eat it! Yummy! And oh... I wonder why you guys are the nation with the highest percentage of diabetes in the world, oncology clinic on every corner and New Year's Resolution as a national promise to yourself and others, never lasting long enough to refuse a single can of soda on January 1st. I know you are all taught to be tollerant, but the funniest thing is those who expect tollerance, they are not even happy with themselve. Otherwise, what are all these New Year's Resoutions for?

  78. I did this w dr pepper and mixed in half the au jus, 2/3 cup of water, carrots, onion and it was fantastic. It was super moist, so I'm surprised anyone had any issues. I will definitely make this again.

  86. You did not ruin your dinner, by opening the crockpot, it just slows down the cooking. We have used coke (diet coke usually---I was told it is the acidity in it, not the sugar---no idea really tho!). I mix my au jus, coke and a can of soup---usually cream of mushroom- add my roast and some onions to it. Cook for 4 hours or so, open it, add potatoes, and carrots, close up and cook another 4 hours or so. Remove all the meat and veggies, pour the remaining juices into a saucepan, bring to a boil and thicken with cornstarch, cook for a couple of minutes, and serve with the gravy poured back over it. It is delicious!

  88. It is fine, Roxanne. That's why you leave the lid on, so it cooks even if it's not swimming in liquid. The closed crock pot creates a self-basting atmosphere. Trust the recipe.

  91. The foreigner is wrong. I learned to cook meat with soda from...the Chinese! I work with international students at a local college and it seems the country's favorite dish isn't fried rice, dumplings, or sweet and sour pork--it's coca cola chicken! I was shocked at first, but once I tried it, I knew these guys understood good food! I've had about 20 different Chinese students from different parts of the country...at different times even, share their coke chicken recipe and not a single one of them weighed over 100 lbs soaking wet. Everything in moderation!

I mixed a can of cream of mushroom soup with about a can full of the broth from the meat & it was the best gravy ever! I will definitely be adding this to our monthly meal rotation!   98. The "cross rib" roast is merely cut from the Chuck section of the beef, which is the shoulder and neck area. These cuts tend to be tough unless marinated and/or braised. These are made for the crock pot, but like others said, it is best to use low heat for 8 hours.

    Some folks think this is just another name for rib roast, but I assure you it has nothing to do with a juicy tender rib roast.

  100. I don't typically leave comments but I made this for my family last night and it was amazing! I've made a lot of disappointing pot roasts in my time but tried this recipe BECAUSE of the coke which I knew would break down and tenderize the meat. Threw in a few bay leaves, baby carrots and onions as well. The end result had the most rich amazing flavor and so tender. My only recommendation is to cook for 9-10 hours (not 8 as stated).

  101. Great Post! I have actually been using the McCormick's brand Pot Roast for years for making both pot roast and stew and its FABULOUS! I have never tried it with the Pepsi and Au Jus but will next time!
    For those of you asking about cooking it without a crockpot, I cook this in either the crockpot or on top of the stove. I brown the meat quickly on all sides, add the liquid and some carrots and onions, cover and simmer for a couple hours (until almost tender). Add potatoes and cook until potatoes and meat are tender (I also add corn and barley at this point if making stew) (I sometimes cook the potatoes in a separate pan with some of the same seasoning mix to make sure that I don't accidentally overcook the meat).
    As far as type of meat, I always use Chuck steak for both pot roast and stew.

  107. Not sure what I did wrong but my roast was not all that tender! I used a 2.5 lb sirloin rib roast. It was very thick. I did 2 hr. on HIGH and then 4 hrs on low. It seemed to be overcooked. The taste was fine, but a bit on the tough side.

  112. I cooked mine on high for 2 hours and then turned it down on low for an additional 4 hour so 6 hours total. It was AMAZING!!!! I Added Potatoes, carrots, onions and halved garlic cloves while it cooked to (well the carrots were canned so I added them after it cooked but if raw you would place them WHILE cooking) :)

  118. This is our favorite meal! I love cooking beef in coke! Not a frequent coke drinker but once in a while is totally cool! If there are any leftovers;usually not much! But you can put the shredded beef on tasty crustini's, sauted onions and mushrooms, melt cheese on top, and drizzle over tops with basalmic vinegar! Amazing!!

  120. This is my first time trying this recipe. My house smells incredible. I've made pork shoulder in the crockpot with a can of coke and it turned out delicious.

    I used an oval shaped crockpot and put carrots and potatoes on the bottom. I cooked on low for 10 hours. I added the au jus at the 9 hour mark.

    The meat is so tender that its falling apart. My 10 year old son asked for a second plate. Will definitely be making this again!

  121. one does not have to own a crock pot to make this recipe, you can cook it in the oven and cover it in tin foil. you can also use diet coke as the author stated. i have also cooked this on the stove on medium heat for eight hours and mmmmmmm was it wonderful :) if you decide to attempt to cook this frozen, be advised you cook time will be longer but just as tasty :)

I don't see where others marinated the meat, but I'm wondering if that would help and how long I would need to marinate to add flavor.

  137. I use the same seasoning pack and 2 cans of cream of mushroom soup. I put it all in when I put the roast in. It makes it's own perfect gravy! So easy and delicious! I use chuck roast.

(ooohh, a foregner that doesn't care about sugar and chemicals in her food :-P) In my country, crock pots are kind of unknown, and stores don't sell the seasoning packages for them. I read somewhere in these comments that a fajita seasoning mix works, too.. should I try that? Or maybe just a mix for simple beef pot roast?

    Negative, Anonymous. A Cross Rib Roast is a bone-in shoulder cut. The same cut without the bone is called a Clod Roast. Less fat than a chuck, although a chuck would be great in this recipe.

    I made this roast on an 8-hour setting. I forgot that my (Rival oval) slow cooker runs hot (not unusual for this model according to Amazon reviews). I should have checked on it at 6 hours. Because of this, the roast was a bit dry but still, it was delicious!

    Good call on this recipe!

  147. The slower you cook the meat (i.e., lower temp for longer time), the more the muscle will break down (read "be more tender"). Always, always, always do so. I'm not Alton Brown, but just sayin'! �� Not necessarily for this recipe, but double wrapping a dry seasoned roast in foil (so the juices stay next to the meat and do not run out to hit the sides of the hot crockpot to burn off) and cooking on low temp for 8 to 10 hrs (depending on size will also produce a tender meal.

  149. I've made this roast several times and it's always a hit. Adding the Au Jus packet at the end really makes a difference! I add baby carrots and chopped celery under the meat. I also use a basic chuck roast. Perfect every single time. Adding some potatoes to it this time.
